Cheese base
1 cup cashews
2T fresh water
2T nutritional yeast
2T lemon juice
1t white wine vinegar
1 clove garlic
½ t sea salt
black pepper to taste
Herb add-ins
½ t basil
½ t oregano
½ t thyme
Instructions:
- Soak cashews in water for 4-12 hours, drain and rinse.
- Add cashews and all other ingredients to food processor and blend till creamy (3-4 minutes).
- Transfer cheese base to a small bowl and add in herbs if you like. You can eat cheese as is or allow to age.
- Place mixture in a cheesecloth and twist till tight, suspend over a bowl using a colander to allow any excess water to escape.
- Refrigerate and serve.
